Mauritian Fruit Salads (Confit) Recipe

This recipe is for a jar of 1.5L. If your jar is in different size, adjust the proportion of the ingredients accordingly.

What You Need.

  • Get a 1.5L glass jar. Plastic jars are also good, but glass jars are the most commonly used since they keep the quality of the fruits better.
  • A jug of at least 1.5L in size for the pickling water.
  • You will need a bottle of white vinegar.
  • A packet of brown sugar. You may use white sugar, but brown is better.
  • A packet of coarse sea salt.
  • 1L of filtered water.
  • Some green or red chilies (Optional).
  • Obviously, your selected fruits, such as pineapples, mangoes, and cucumbers, are already cut and washed!

The Preparations Of The Pickling Water.

  • In the jar, add your fruits.
  • In the jug, add 475ML of white vinegar.
  • Add 450ML of the filtered water.
  • Add 20 tablespoons of brown sugar.
  • Add 3.5 tablespoons of the coarse sea salt.
  • Mix everything for 2 minutes, and pour the pickling water in the jar with fruits.
  • Add some chilies in the jar (Optional).

Do not overtighten the jar because it may become difficult to open once the fruits have soured. Simply seal it softly and set aside for 24 hours. After 24 hours, you can eat your fruits. You might try the fruit salads with chilies or salt and chili powder, which are popular here. Consume the fruits within 7 days. If after 7 days, you notice a strong fermentation odor from the white vinegar, reduce the amount of vinegar by 50ML the next time.
